Grilled Chicken, Avocado & Asparagus Salad

  • 1 pound boneless skinless chicken breasts
  • 1 avocado, sliced
  • 1 bunch of asparagus, ends cut
  • 5 ounces mixed baby greens
  • Olive oil


  • 1 lime, zested
  • 1 garlic clove, minced
  • 2 tablespoons white balsamic vinegar
  • 1/3 cup extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • Salt and pepper, to taste


  1. Heat a grill pan or preheat an outdoor grill to medium-high. Brush chicken breast, avocado slices, and asparagus with olive oil, and season with salt and pepper.
  2. Grill avocado and asparagus until cooked, about two to three minutes per side. Remove vegetables and grill chicken until internal temperature reaches 165°F.
  3. Combine dressing ingredients in a bowl and whisk together.
  4. Slice chicken and assemble salad. Garnish with lime wedge and serve with dressing.
