Mixed Greens with Apple & Goat Cheese

The spicy arugula and bitter radicchio are the perfect backdrop to the creamy goat cheese and helps ensure this salad isn’t too sweet. What you’re looking for here is balance! The dressing is the perfect blend of fall flavors with apple cider vinegar for tang and maple syrup for sweetness. This classic salad will whet your appetite and set the stage for a great meal.

Ingredients:

SALAD

  • 3 ounces mixed greens
  • 1 ounce arugula or radicchio, torn into pieces
  • 2 Gala apples, cored and sliced
  • 4 ounces goat cheese
  • 1/2 cup walnuts, coarsely chopped
  • 1/3 cup dried cranberries

DRESSING

  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon maple syrup
  • 1 teaspoon Dijon mustard
  • Pinch of salt and ground black pepper

Directions:

  1. Place greens on a serving platter.
  2. Arrange apple slices evenly over greens and sprinkle on goat cheese, walnuts, and dried cranberries.
  3. Whisk together dressing ingredients and adjust to taste. Drizzle over salad, serve promptly.
